Welcome to a sweet treat inspired by the sun-kissed flavors of Sicily: Crispelle (sweet rice fritters).

Filled with Arborio rice, these sweet morsels are an embodiment of warmth and sweetness.


Embark on a culinary journey as we infuse each bite with the essence of vanilla, a hint of lemon and the irresistible charm of deep-fried perfection.

This version transforms the ordinary into a symphony of flavors, making it an exquisite dessert or a delicious accompaniment for afternoon tea.

 

 

INGREDIENTS:

  • 1 1/2 cups Arborio rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • Grated zest of 1 lemon
  • A pinch of salt
  • Vegetable oil for frying
  • Powdered sugar for dusting (optional)

For the batter:

  • 1 1/4 cups all-purpose flour
  • 1 large egg
  • 1 tablespoon sugar
  • A pinch of salt
  • Milk as needed

 

METHOD:

  1. Preparing the Rice:
    • Cook the rice in four cups of milk with the addition of sugar, vanilla, lemon zest, and a pinch of salt.
    • Cook over low heat until the rice is tender and the milk is absorbed. Stir occasionally.
  2. Cooling the Rice:
    • Let the rice mixture cool to room temperature.
  3. Preparing the Batter:
    • In a bowl, mix the flour with the egg, one or two tablespoons of sugar (depending on your taste), and a pinch of salt.
    • Gradually add milk and mix until you get a smooth and thick batter.
  4. Combining Rice and Batter:
    • Add the cooled rice to the batter and mix well until you have a homogeneous mixture.
  5. Frying:
    • Heat plenty of vegetable oil in a deep skillet.
    • When the oil is hot, take spoonfuls of the batter and drop them into the oil to form fritters.
    • Fry the fritters until they are golden brown on both sides.
    • Use a slotted spoon to remove them from the oil and place them on paper towels to absorb excess oil.
  6. Serving:
    • You can dust the sweet rice fritters with powdered sugar before serving. They are delicious when eaten warm.
