Makes about 20 Crispelle

INGREDIENTS:

  • 1 cup Arborio rice
  • 1 cup whole milk
  • 1 cup mineral water
  • Pinch of salt
  • 1 tablespoon vanilla extract
  • ⅓ cup
  • sugar
  • 1 cup all-purpose flour
  • 1 tablespoon fresh yeast
  • 2 tablespoons milk (to dissolve the yeast)
  • Ground cinnamon (to taste)
  • Zest of three oranges (organic, if available)
  • Orange blossom honey (for drizzling)
  • powdered sugar (for dusting)
  • Peanut oil (for frying, as needed)

METHOD:

Prepare the rice mixture:
In a saucepan, combine the milk and mineral water.

Bring the mixture to a boil, salt lightly and stir in the rice.

Cook over low heat until the rice absorbs all the liquid but remains slightly firm (al dente).

Add a pinch of cinnamon and the granulated sugar, stirring well.

Spread the rice mixture on a baking sheet and let it cool for about 15 minutes.

Prepare the dough:
When the rice mixture is warm, add the orange zest, flour, vanilla extract, and yeast dissolved in 2 tablespoons of warm milk.

Mix thoroughly until the dough is well combined. Cover the dough with plastic wrap and let it rise in a warm place for 3 hours.

Form the crispelles:
With damp hands, take a tablespoon of the risen dough and shape it into thin strings about 4 inches (10 cm) long.

Fry the crispelle:
In a large pot or wok, heat peanut oil to 325°F (162°C).

Fry the rice crispelle in batches, turning occasionally, until golden brown and crispy on all sides.

Remove from oil and drain on paper towels to remove excess oil.

Serve:
Once the crispelle are fried, arrange them on a serving platter.

Sprinkle with powdered sugar.

Dilute orange blossom honey with a small amount of hot water and pour it over the crispelle.

Dust with more powdered sugar and serve immediately.

Enjoy your meal with Sicilian rice crispelle!
