Custard is a widely used preparation in pastry making: it is great to enjoy on its own, to make spoon desserts, or to fill cakes, tarts, sponge cakes, cream puffs, puff pastry.

The recipe calls for just a few ingredients (milk, sugar, eggs and flour) and very simple steps: boil the milk, separately whisk the eggs with the sugar, then add the flour, and when the milk is hot enough, incorporate the newly whipped mixture, letting it cook until a thick cream forms.


 

 

 

 

 

SERVING:

Serves 4 to 6

INGREDIENTS:

  • 4 cups of milk
  • 1 ¼ cups of sugar
  • 1 piece of orange peel
  • 6 egg yolks
  • 1/2 cup  cake flour or 1/3 corn starch
  • pinch of salt
  • 1 drop of vanilla essence

METHOD:

  1. Heat the milk, salt and the orange peel in a 4 quart heavy saucepan, at a low heat.

  2. At the same time in a large bowl mix the sugar and the flour or corn starch and add the egg yolks one at a time, stirring with a wire whisk until well homogenized.

  3. When the milk is warm add 1 cup to the bowl a little at a time, stirring continuously to avoid lumping.Increasing the heat a little bit and transfer egg mixture into the pot with milk.

  4. Continue cooking, stirring constantly until it thickens and bubbles for 1 minute.

  5. Remove from fire, discard orange peels, mix in the vanilla and place in a bowl.

  6. Cover surface with wax paper and store in the refrigerator for a few hours or until ready to use.
