These delicious treats are a perfect blend of the robust flavor of coffee and the crunchiness of almonds.

Makes about 25-30 cookies


  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons instant coffee granules
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped almonds
  • 1 cup chocolate chips (optional)
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. Dissolve the instant coffee granules in a tablespoon of hot water and add this to the mixture.
  5. In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually add this to the butter mixture and mix until well incorporated.
  6. Fold in the chopped almonds and chocolate chips (if using).
  7. Drop rounded tablespoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
