For the crust:
  • 1 1/2 cups almond flour
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1/2 teaspoon almond extract
For the filling:
  • 2 cups ricotta cheese
  • 3/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon
  • 4 large eggs
For the topping:
  • 1/2 cup sliced almonds
  • 2 tablespoons honey
  • Powdered sugar for dusting (optional)
Instructions:
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with butter or non-stick spray.
  2. Make the crust:
    • In a bowl, combine almond flour, sugar, melted butter, and almond extract until the mixture resembles wet sand.
    • Press the mixture into the bottom of the prepared pan, forming a crust.
    • Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
  3. Prepare the filling:
    • In a large mixing bowl, blend the ricotta cheese until smooth.
    • Add sugar, flour, vanilla extract, and lemon zest, and mix until well combined.
    • Beat in the eggs, one at a time, just until incorporated.
  4. Assemble the cheesecake:
    • Pour the filling over the cooled crust and smooth the top with a spatula.
    • Sprinkle the sliced almonds evenly over the top of the filling.
  5. Bake the cheesecake:
    • Bake for 45-50 minutes, or until the cheesecake is set but still slightly wobbly in the center.
    • Turn off the oven, open the oven door slightly, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
  6. Add the finishing touches:
    • After cooling, drizzle honey over the top of the cheesecake.
