For the crust:
  • 1 1/2 cups almond flour
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 1/2 teaspoon almond extract
For the filling:
  • 2 cups ricotta cheese
  • 3/4 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon vanilla extract
  • Zest of 1 lemon
  • 4 large eggs
For the topping:
  • 1/2 cup sliced almonds
  • 2 tablespoons honey
  • Powdered sugar for dusting (optional)
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with butter or non-stick spray.
  2. Make the crust:
    • In a bowl, combine almond flour, sugar, melted butter, and almond extract until the mixture resembles wet sand.
    • Press the mixture into the bottom of the prepared pan, forming a crust.
    • Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
  3. Prepare the filling:
    • In a large mixing bowl, blend the ricotta cheese until smooth.
    • Add sugar, flour, vanilla extract, and lemon zest, and mix until well combined.
    • Beat in the eggs, one at a time, just until incorporated.
  4. Assemble the cheesecake:
    • Pour the filling over the cooled crust and smooth the top with a spatula.
    • Sprinkle the sliced almonds evenly over the top of the filling.
  5. Bake the cheesecake:
    • Bake for 45-50 minutes, or until the cheesecake is set but still slightly wobbly in the center.
    • Turn off the oven, open the oven door slightly, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
  6. Add the finishing touches:
    • After cooling, drizzle honey over the top of the cheesecake.
    • Refrigerate for at least 4 hours, or overnight, which is preferable for the flavors to meld.
  7. Serve:
    • Before serving, if desired, dust the top with powdered sugar for a sweet, decorative finish.
    • Carefully remove the cheesecake from the springform pan, slice, and enjoy your delicious Ricotta Cheesecake with Almonds!
This cheesecake combines the creamy texture of ricotta with the nutty flavor of almonds for a dessert that’s sure to impress. Buon appetito!
