Ingredients:

  • 3 ¾ cups (500g) all-purpose flour
  • ¼ cup + 2 tablespoons (75g) granulated sugar
  • ⅓ cup (75g) unsalted butter
  • 2 egg yolks
  • ¾ cup (180ml) water
  • Frying oil

Ingredients for the Ricotta Filling:

  • 1 ½ lb. (680g) fresh ricotta cheese, drained
  • ¾ cup granulated sugar
  • 2 oz. (56g) dark chocolate, finely chopped
  • 1 teaspoon vanilla extract
  • 1 tablespoon dark rum
  • 1 teaspoon ground cinnamon

 

METHOD:

Squeeze the ricotta cheese:

Using a rubber spatula, squeeze the ricotta cheese through a fine-mesh strainer into a large bowl.
Add the sugar, rum, cinnamon and vanilla to the ricotta and stir until well combined.
Add the finely chopped chocolate.
Place the ricotta mixture in the refrigerator to chill.

Dough preparation:

Dough:
In a separate bowl, combine the flour, sugar, butter, and egg yolks.

Gradually add the water, a little at a time, while working the dough until it forms.

Knead and rest the dough:

Knead the dough for a few minutes until smooth.
Form into a ball.
With a rolling pin, roll out the dough thinly and fold it over on itself three times.
Cover the dough with plastic wrap and let it rest in the refrigerator for at least 1 hour.

Assemble and fry the ravioli:

Remove the dough from the refrigerator and roll it out with a rolling pin to a very thin thickness.
Cut the dough into 5-inch squares.
Place a teaspoon of the prepared ricotta mixture in the center of each square.
To seal the ravioli, lightly brush two of the edges of the square with water and fold over the other two edges.

Press firmly to seal, making sure not to use too much water and letting dry before frying.

Heat the frying oil in a deep frying pan.
Fry the ravioli until golden brown.

Drain and serve:
Place cooked ravioli on paper towels to drain excess oil.
Sprinkle the ravioli with powdered sugar.
