For the puffs:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • A pinch of salt

For the chocolate cream filling:

  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 4 egg yolks
  • 1/3 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 5.3 ounces (about 150g) dark chocolate, finely chopped
  • 1 teaspoon vanilla extract

For finishing:

  • Cocoa powder (for dusting)



  1. Prepare the puffs:

    • In a saucepan, bring water, butter, and salt to a boil.
    • Add sifted flour to the boiling mixture, quickly stirring with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan.
    • Transfer the dough to a bowl and let it cool for a few minutes.
    • Add eggs one at a time, mixing well after each addition, until you have a smooth dough.
  2. Bake the puffs:

    • Transfer the dough to a piping bag and pipe small mounds onto a parchment-lined baking sheet.
    • Bake in a preheated oven at 400°F (200°C) for about 20-25 minutes or until the puffs are golden and puffed.
    • Allow them to cool completely.
  3. Prepare the chocolate cream:

    • In a saucepan, heat the milk until it begins to boil.
    • In a separate bowl, mix egg yolks, sugar, flour, and cocoa until smooth.
    • Pour the hot milk into the egg mixture, whisking continuously.
    • Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until the cream thickens.
    • Remove from heat and add the chopped dark chocolate and vanilla extract. Stir until the chocolate is completely melted.
  4. Fill the puffs:

    • Cut the tops off the puffs and fill them with the chocolate cream using a piping bag.
  5. Finish:

    • Dust the puffs with cocoa powder.
