In Rome, there is no Ferragosto without Pollo con i Peperoni: a great classic of Lazio cuisine, companion of many family lunches, when it was our grandmothers who cooked for long and cheerful tables.

The recipe is simple, the ingredients easy to find and the result extraordinary.

INGREDIENTS:

  • 1 medium chicken
  • 1/2 cup of tomato puree
  • 1 tbsp of tomato paste
  • 1 red bell pepper
  • 1 clove of garlic
  • dry white wine to taste
  • extra virgin olive oil to taste
  • 1 sprig fresh thyme
  • salt and pepper to taste

 

 

METHOD

Wash the peppers well (removing seeds, stalk and filaments) and cut them into strips.

Brown the garlic in a pan.

Add the chicken pieces and brown evenly.

Deglaze with the white wine.

Add the puree and tomato paste.

After stirring thoroughly, add the peppers, season with salt and pepper, cover, and cook over medium heat for about 1 hour.
