Castagnole melt-in-the-mouth chestnuts appeal to adults and children alike and are perfect not only at Carnival, but also for birthdays and yummy snacks.

 


 

 

 

 

SERVINGS:4

INGREDIENTS:

  • 1+1/2 cups of all purpose flour
  • 2 eggs
  • 1/4 cup of sugar+ more for dusting
  • 1/4 cup of unsalted butter
  • 1 tsp of dark rum
  • 1/2 tbsp of baking powder
  • 1 lemon rind, grated
  • a pinch of salt
  • frying oil

 

METHOD:
Put all ingredients, except the frying oil, in a large bowl and mix.
Dust the bowl with a little flour, form a ball with the dough, dust with more flour.
Cover with a wrap and set a side to rest about 20 minutes.
Take the dough and divide it in half.
On a slightly floured surface, roll the dough to form 2 logs about 1/2 inch thick.
Cut the log in 1/2 inch pieces.
Using your hands roll the dough in little balls.
Heat the frying oil in a deep fry pan and cook the castagnole, just a few at a time.
Put the castagnole on kitchen towels to drain the excess oil.
Roll the castagnole in granulated sugar.
Enjoy hot!!
