Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 2 large eggs
  • A pinch of salt
  • 1/4 cup white wine (such as Marsala)

For the Filling:

  • 1 1/2 cups whole milk ricotta cheese
  • 1/2 cup granulated sugar
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)
  • 1 egg yolk (for egg wash)
  • Powdered sugar, for dusting

Instructions:

For the Dough:

  1. In a large mixing bowl, combine the flour, sugar, and a pinch of salt.
  2. Add the cold, cubed butter and work it into the flour mixture using your fingers or a pastry cutter until it resembles coarse crumbs.
  3. In a separate bowl, whisk together the eggs and white wine.
  4. Make a well in the center of the flour mixture and pour in the egg and wine mixture.
  5. Mix until the dough comes together. If it’s too dry, add a little more wine, if needed.
  6. Knead the dough on a lightly floured surface until smooth, then cover it with plastic wrap and let it rest for 30 minutes.

For the Filling:

  1. In a mixing bowl, combine the ricotta cheese, granulated sugar, lemon zest, and vanilla extract. Add the mini chocolate chips, if desired, for an extra layer of flavor and texture.
  2. Mix the filling until smooth and well combined.

Assembling the Cassatelle:

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the rested dough on a floured surface to about 1/8-inch thickness.
  3. Use a round cutter (approximately 4 inches in diameter) to cut out circles from the dough.
  4. Place a spoonful of the ricotta filling in the center of each circle.
  5. Fold the dough in half, covering the filling, and press the edges to seal, creating a half-moon shape.
  6. Beat the egg yolk and brush it over the tops of the Cassatelle.

Baking:

  1. Place the Cassatelle on a parchment-lined baking sheet and bake in the preheated oven for 20-25 minutes or until they are golden brown.
  2. Let them cool slightly and dust with powdered sugar before serving.
