How are baked ziti in the Bari way?
Good, so good!

But also so easy to make! The perfect dish for those who want to bring to the table a first course suitable for the whole family or when you want to surprise your friends.


This Apulian recipe is the perfect dish even when you have impromptu guests; it is also very clever because you can play it up in advance and then serve when needed.

INGREDIENTS:

  • 1 clove of garlic
  • fresh basil to taste
  • 1 cup of ground beef
  • mozzarella cheese to taste
  • extra virgin olive oil to taste
  • fresh oregano to taste
  • 1/4 cup of breadcrumbs
  • 10 oz of ziti pasta
  • 1 cup of Pecorino Romano cheese grated
  • pepper to taste
  • 3 cups of peeled tomatoes
  • parsley to taste
  • salt to taste
  • 7 oz of pork sausage
  • 4 eggs
  • 1/2 glass of white wine

 

METHOD

Brown garlic with 2 tablespoons oil, remove, add crumbled sausage, stir, douse with wine and partially evaporate; add peeled tomatoes, a pinch of oregano, salt and pepper; cover and cook over low heat for 30 minutes.

Mix meat with 1/2 cup pecorino cheese, bread crumbs, fresh eggs, chopped parsley, salt and pepper; form into many hazelnut-sized patties.

Heat 4-5 tablespoons of oil in a frying pan and brown the patties; drain on kitchen paper.

Break the ziti into 2-3 pieces and cook them in plenty of salted water; drain them when al dente and lay them on a wet kitchen towel.

Add 2-3 chopped basil leaves to the tomato sauce, pour a few tablespoons of it on the bottom of a baking dish, make a layer of pasta, spread some of the meatballs on top, a few slices of mozzarella, pecorino cheese and more sauce; make another layer of pasta and continue like this until you run out of ingredients.

Finish with a sprinkling of pecorino cheese and place the pan in a 390 F oven for 20 minutes.
