This hearty one-pot meal brings together tender potatoes, flavorful sausage and vibrant tomatoes, all seasoned with herbs and spices.

INGREDIENTS:

  • 3-4 medium potatoes, peeled and thinly sliced
  • 10-12 oz sausage, cut into pieces
  • Half onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Half teaspoon chili powder (or more to taste)
  • 14 oz canned diced tomatoes
  • 1 cup water
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Grated Parmigiano Reggiano cheese for garnish

 

METHOD

  1. Preheat oven: preheat oven to 350°F and lightly grease a round baking pan with olive oil.

  2. Sauté the potatoes: Arrange potato slices in the prepared baking dish. Sprinkle with chopped onion, minced garlic, oregano and chili powder. Pour a little olive oil over the potatoes.

  3. Add the sausage: Spread the sausage pieces over the potatoes in the pan.

  4. Add the tomatoes and water: Pour the diced tomatoes over the sausage. Then add one cup of water to the pan.

  5. Season and cook: season with salt and pepper to taste. Cover the pan with aluminum foil and bake for about 30-40 minutes, or until the potatoes are tender.

  6. Final cooking: Remove the aluminum foil and bake for another 10-15 minutes, or until the top is golden brown.

  7. Serving: Once cooked, remove the pan from the oven and let it cool for a few minutes. Sprinkle the dish with grated Parmesan cheese and serve hot.
