Baked sausage peppers and potatoes is an excellent and easy to make main course, the goodness of potatoes and peppers accompanied by excellent sausage and all done in the oven, great dish to offer even in Sunday lunch!
- 2 large peppers
- 10 oz of pork sausage
- 3 medium potatoes
- salt to taste
- powdered chili pepper (optional)
- extra virgin olive oil to taste
- 1 onion
Wash the peppers thoroughly and dry them by patting them dry with paper towels, remove the inner filaments and seeds well then cut them into small pieces or strips, depending on how you prefer them.
Now take the sausage and cut it into pieces that are not too small, take the potatoes rinse them dry, peel them and add them to the peppers and sausage by cutting them into medium cubes.
Arrange all the ingredients in a baking dish or a nice large oven dish, spread oregano (optional) chili pepper and thinly sliced onion on top, drizzle with plenty of extra virgin olive oil and sprinkle some salt over the potatoes.
Bake at 350 F for 35 to 40 minutes in static or fan mode and turn the potatoes occasionally.
As soon as the potatoes are nice and golden and the peppers soft you can turn off the oven.
It will be a real riot of flavor and will be a very welcome and appreciated dish for the whole family, and all that’s left is for me to wish you a good appetite!
TIP: If you want the potatoes to be nice and crispy on the outside and soft on the inside cut them into cubes and leave them for an hour in a bowl soaked in water ..then dry them by wrapping them in a cloth and continue cooking as per the recipe!
