Garlic Potatoes are not the usual Side-Dish of Potatoes, but a variation enriched by the intense flavor of garlic and the aromatic note of rosemary, softened by the sweetness of butter.

A combination of flavors that will surely tantalize the palate of the whole family, because not only those who are lovers of strong flavors will be able to appreciate them.

In addition, it is an excellent alternative to the classic Baked Potatoes, so beloved but sometimes abused on menus, thus revisiting an iconic recipe, with only a few minor tricks.

  • 600 grams of Potatoes (about 4 cups)
  • 2 cloves of Garlic
  • 40 grams of Butter (about 3 tablespoons)
  • Olive Oil, to taste
  • Salt, to taste
  • Pepper, to taste
  • Rosemary, to taste

To prepare Garlic Potatoes first boil the potatoes in their skins for about 20 minutes, until partly tender.

Then peel the potatoes and cut them into large chunks.

Now crush the garlic cloves without peeling them and brown them in a pan with the oil and butter.

Spread the potatoes on a baking sheet lined with parchment paper, drizzle them with the garlic seasoning, adjust the salt and pepper and add a few sprigs of rosemary.

Bake them in the oven at 350 F for about 20 minutes.

Once the Garlic Potatoes are nicely browned, take them out of the oven, let them cool for a few moments and serve!

If you wish, you can replace the rosemary with other herbs such as sage, thyme or marjoram.

Alternatively, if you do not want to turn on the oven, you can also bake the potatoes in a frying pan following the same procedure and cooking them for about 15 minutes.

To further reduce preparation time, you can boil the potatoes in the microwave; simply peel them, cut them into chunks and transfer them to a container suitable for microwave cooking.

Add a drop of water and cover with suitable food wrap, poking holes in it with a toothpick.

Finally, cook the potatoes at maximum power for 5 minutes.

Garlic Potatoes can be stored in the refrigerator, inside an airtight container, for up to 2-3 days.
