- 4 tbsp fresh thyme
- 2 medium onions, finely chopped
- 3 cloves garlic, minced
- 3 sticks unsalted butter (divided use)
- 2 cups white wine

For Breading and Frying
- 4 cups plain breadcrumbs
- 2 cups all-purpose flour
- 4 eggs, beaten
- Canola or frying oil
For Serving
- Fresh Pomodoro sauce (optional)
Step-by-Step Method
1. Prepare the Risotto Base
- Soak the saffron in white wine and set aside.
- Melt 2 sticks of butter in a large pan over medium heat. Add onions and garlic, cooking gently for 5-7 minutes until translucent.
- Add the Arborio rice, stirring to coat evenly. Heat the rice until warm to the touch, stirring constantly.
- Add thyme and the saffron-infused wine. Cook until the wine is almost fully evaporated.
- Begin adding the hot chicken stock one ladle at a time, stirring constantly. Allow each ladleful to absorb before adding the next.
- Once the rice is slightly harder than al dente, remove from heat. Stir in Parmigiano Reggiano, peas, and adjust seasoning with salt and white pepper.
- Spread the risotto onto a thin sheet tray to cool completely. Refrigerate for at least 1 hour or up to 2 days.
2. Shape the Arancini
- Remove the risotto from the fridge and let it come to room temperature.
- Roll the rice into balls slightly larger than a walnut. Press a hole in the center and insert a cube of Fontina cheese. Close and reshape into a ball.
- Repeat with the remaining rice.
3. Bread the Arancini
- Prepare a breading station: place flour, beaten eggs, and breadcrumbs in separate bowls.
- Roll each rice ball in flour, then dip in egg, and finally coat in breadcrumbs.
- Place the breaded arancini on a parchment-lined tray.
4. Fry the Arancini
- Heat oil in a deep fryer or deep pan to 350°F (175°C).
- Fry the arancini in batches, being careful not to overcrowd the pan. Cook until golden brown and crisp, about 3-4 minutes per batch.
- Drain on paper towels and keep warm until ready to serve.
Serving Suggestions
- Serve arancini hot over a bed of fresh Pomodoro sauce.
- Garnish with grated Parmigiano and a sprinkle of parsley.
Tips for Success
- Avoid Overcooking: Risotto should be slightly firm to hold its shape when rolled.
- Freeze for Later: Bread the arancini and freeze in a single layer. Cook straight from frozen, adding an extra minute or two to the frying time.
- Fillings: Get creative! Try ham, mushrooms, or even spicy sausage.
