This recipe promises a symphony of textures and flavors that make it perfect for any occasion.

Layers of thinly sliced Golden Delicious apples, interspersed with crumbled macaroons and raisins, create a harmonious blend of fruity and nutty goodness.


Each bite is an explosion of flavor, enhanced by subtle notes of cinnamon, lemon zest and a touch of rum cherry jam.

INGREDIENTS:

  • 3/4 cup of sugar
  • 3 eggs
  • 3 tbsp of butter
  • 2 1/2 cups of all purpose flour
  • 2 tsp of baking powder
  • 2 apples
  • 1 oz of raisins
  • 5 amaretti cookies
  • 1 cup of milk
  • rum (a splash)
  • 2 tbsp of cherry jam
  • 1 tsp of vanilla extract
  • lemon zest to taste
  • cinnamon powder to taste
  • a pinch of salt
  • powdered sugar to taste

 

 

METHOD:

Mix the egg yolks well with the sugar the melted butter and the pinch of salt.

Add the sifted flour with baking powder, grated zest,the rum and enough milk to form a rather soft dough (depends on the type of flour) let it rest x a while.

In the meantime, butter and flour a 10-inch-diameter opening mold.

Thinly slice the apples, dilute the jam with 1 drop of liqueur to taste.

Place about half of the mixture in the mold and arrange 1 layer of apples crumbled over 3 amaretti, the raisins, and a little vanilla extract with some butter flakes.

Make 1 more layer of apples, amaretti, vanilla extract and butter.

Spread the jam thinned with liqueur on top and sprinkle with cinnamon.

Whip the egg whites until stiff and gently incorporate them into the ‘remaining mixture and cover the cake.

Bake in preheated static oven bake x 40-45 minutes at 350 F.

Sprinkle with powdered sugar and serve warm.
