In the cold days of this long winter that make us happy, pamper us and keep us company, our favorite sweets, such as traditional almond pastries, are what we cherish most.
During the winter season, these little sweets are ever-present in our homes to warm our hearts and satisfy even the most discerning palates.
Almond pastries are delights to be enjoyed at any time of the day, whether at lunchtime after coffee or in the afternoon to accompany a delicious hot chocolate or to sip a relaxing cup of tea.
These almond treats have a rich aroma and are truly delicious.
Their characteristic is the unique softness on the inside and the fragrant crispness on the outside.
A really simple recipe that requires few ingredients and few preparation steps.
Ingredients for approximately 20 almond pastries:
- 2 cups of peeled almonds
- 2 egg whites
- 250 g (1+1/4 cup ) sugar
- Whole almonds for final decoration
- Grated zest of ½ lemon
- Powdered sugar for decoration
- Candied cherries
Step 1: Put the peeled almonds and sugar into a food processor with steel blades and blend them until you obtain a fine almond flour.
Step 2: In another bowl, beat the egg whites with a fork or a dessert whisk until you create a white foam. Combine this with the almond and sugar mixture and blend again until you get a compact and soft dough.
Note: If the dough is not soft enough, you can add another egg white.
Important: If you want to give a strong scent to your treats, add the grated lemon zest to the dough.
Step 3: Take a pastry bag with a ridged nozzle (3.94 inches diameter) and fill it with the dough using a spoon.
Step 4: Take a baking sheet and cover it with parchment paper. Then, using the pastry bag, create your pastries.
Be mindful of the height of the pastries; if they are too low, they might dry out too much during baking. Aim for a height of approximately 2 cm.
Decorate each sweet with a whole almond or a candied cherry.
Cover the tray with plastic wrap and place it in the refrigerator to cool for at least an hour.
Step 5: After refrigerating, you can put your sweets in a preheated oven at 350 F in a fan-assisted mode. The baking time is about 15 minutes.
Be careful not to overcook them, or they won’t be soft enough inside. Once baked, let them cool and serve them on a tray with powdered sugar.
