Today we prepare delicious and fragrant lemon cookies.

A very quick and tasty almond flour recipe.


These light almond flour and lemon cookies with intense aromatic notes are perfect for a fresh and healthy breakfast but also for a small afternoon snack while sipping a warm cup of tea or a great juice.

They are crispy on the outside, while inside they are soft and delicate with a lemon scent that wins you over at first taste.

 

 

 

 

INGREDIENTS:

  • 1 1/2 cups (200g) all-purpose flour
  • 1 1/2 cups (170g) almond flour
  • 1 teaspoon of vanilla baking powder
  • Zest of half a lemon
  • 2 tablespoons of milk (about 25g)
  • 2/3 cup (140g) sugar
  • 2 eggs
  • Powdered sugar (confectioners’ sugar) for dusting (as needed)
  • Granulated sugar (as needed)

 

METHOD

  1. Start by sifting the all-purpose flour and almond flour into a bowl. Stir them together with a spoon to make it uniform.
  2. Gradually add the vanilla baking powder and granulated sugar to the mixture.
  3. In another bowl, beat the two eggs and measure out the fresh milk. Use a whisk or two forks to continue beating the mixture.
  4. Then, add the grated lemon zest and pour everything into the flour mixture.
  5. Work the dough with your hands until it forms a smooth and soft dough.
  6. With slightly damp hands, shape the dough into small balls and roll them first in powdered sugar (confectioners’ sugar) and then in granulated sugar.
  7. Place the balls on a baking sheet lined with parchment paper and bake at 170°C (about 340°F) for approximately 10-12 minutes.
  8. Allow them to cook without becoming too hard or dry.
  9. Serve these almond-flour sweets with a final dusting of powdered sugar.
