These twice-baked cookies are renowned for their delicious crunchiness, perfect for dipping into a glass of Vin Santo, an Italian dessert wine.

Made with simple but flavorful ingredients such as almonds, vanilla, and butter, Cantucci alle Mandorle are a harmonious blend of sweetness and nuttiness.

Ingredients:

  • 3 3/4 cups (500 g) flour
  • 1 3/4 cups (375 g) sugar
  • 8 oz. (250 g) natural almonds
  • 2 teaspoons baking powder
  • 3 eggs
  • 1/2 cup (100 g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 egg, beaten

 

METHOD:

  • Preheat the oven to 350°F (175°C).

  • In a large bowl, mix the flour, sugar, and baking powder.

  • Add the 3 eggs, melted butter, and vanilla extract. Mix well.

  • Add the almonds and mix. The dough will be dry.

  • Divide the dough into three portions.

  • On a slightly floured surface, roll each portion to form three logs.

  • Place the logs on a baking sheet and brush with the beaten egg.

  • Bake for 30 minutes or until golden brown. Let the logs cool slightly.

  • On a cutting board, cut the cantuccini on a slant. Enjoy with Vin Santo.
