INGREDIENTS:

  • 14 oz (about 400 g) pasta (preferably spaghetti or penne)
  • 1.1 lb (500 g) ripe tomatoes
  • 2 cloves of garlic, finely minced
  • 1 bunch of fresh basil
  • 4 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

Instructions:

  1. Preparing the Tomatoes:

    • Heat a pot of water and immerse the tomatoes for 1-2 minutes.
    • Drain the tomatoes and cool them under cold water.
    • Peel the tomatoes and remove the seeds. Cut the flesh into pieces.
  2. Making the Sauce:

    • In a skillet, heat the olive oil over medium heat.
    • Add the minced garlic and sauté until it becomes golden brown.
    • Add the chopped tomatoes to the skillet and cook over medium-low heat for about 15-20 minutes, gently mashing the tomatoes with a spatula to achieve a creamier consistency.
    • Season with salt and pepper to taste.
  3. Cooking the Pasta:

    • While the sauce is cooking, bring a pot of salted water to a boil.
    • Cook the pasta according to the package instructions until al dente.
  4. Completing the Dish:

    • Drain the pasta and transfer it to the skillet with the tomato sauce.

    • Mix well to combine the flavors.

    • Add the freshly chopped or torn basil leaves.

    • Serve the pasta hot, optionally drizzling with a bit of olive oil and garnishing with fresh basil leaves.
