  • 7 organic lemons, untreated
  • 2 cups (500 ml) 95% alcohol by volume (ABV) (190 proof)
  • 1 four-quart jar
  • 3 cups (600 grams) granulated sugar
  • 3 1/4 cups (700 ml) mineral water
  • A food thermometer



1. Prepare the sugar syrup:Put the water and sugar in a pot and bring to a boil. Set aside.

2. Prepare the lemon peels: Wash and dry the lemons. Using a peeler, peel the lemons, avoiding the white part of the inner peel.

3. Place the lemon peels in the jar and add the alcohol. Close the jar tightly.

4. Heat the water:In a very large pot, bring the water to 50°C (122°F). Turn off the heat.

5. Place the jar in the hot water and cover the pot. Let stand for at least 2 hours, but can stay until the water is at room temperature.

6. Pour the liqueur into the cooled sugar-water mixture and stir. Do not add the liqueur to the sugar water unless it is cold. Strain through a fine strainer and bottle. Place the bottle in the freezer.

7. Enjoy your homemade limoncello, made in just over two hours.
